Making Soup with Friends

I’m getting in the soup making mood. I love this time of year when you get to put on sweaters and scarves and make soup. Despite the freakishly warm weather we are having for mid October, cough cough global warming cough, I’m still feeling in the spirit to make warm cozy recipes like this delicious Cleansing Carrot Autumn Butternut Squash Soup https://www.theglowingfridge.com/cleansing-carrot-autumn-squash-soup/!

What’s even better than making soup? Sharing the experience with a close friend!! My friend Lindy and I love to get together and cook dinners when our men are away. We get to chat, gossip, complain, all while chopping veggies and prepping a great meal together. Food tastes so much better when you eat it with people you love!

This particular recipe required a lot of prep work like cutting and peeling the butternut squash (here is a good link to how to do that: https://www.gimmesomeoven.com/how-to-peel-seed-and-cut-butternut-squash/), then we had to chop up the apple, carrot, half an onion, mince the garlic, grate the ginger, etc. It gave us plenty of time to catch up and lament about the state of the world and the plight of women to have a voice and position of respect in the world!! Women can enjoy cooking and feminine things (cooking isn’t feminine guys) and be successful career women who think for themselves!

Anyway, we used Lindy’s homemade chicken broth instead of the low-sodium vegetable broth the recipe called for and it gave it great flavor if you’re not vegetarian. We sautéed all the veggies and spices in the broth and added the fresh squeezed lemon and maple syrup. Then we poured the contents into her Vitamix to blend it until smooth. We don’t have an immersion blender, but the Vitamix made it come out smooth and delicious. We topped it off with pecans.

We also baked a corn bread to go with it and had a nice spinach salad on the side.

The meal was delicious and healthy! Of course we had to drink some white wine with it! The best part was spending time with my friend, because even if you’re married it is so important to maintain close female friendships. They help you vent frustrations, laugh at yourselves, and show care and love to one another.
